[Applause] Fresh chopped basil for the rice. Oh yeah, that’s it. Chef’s chicken thigh recipe part two. For the full recipe, search the channel. Ah, the finished chicken looking really good. Going to give it a quick test here and then we’re going to throw a sauce together. This is what you’re looking for with the chicken uh the ice soft, tender, juicy. Of course, we’ve got the smoky flavor as well. But this is really ah here’s the chicken approximately 4 hours later. This teriyaki chicken has been smoking over oak and cherry for about 45 minutes. Adding the juice back to the chicken. Going to continue cooking it at a very low temperature. About another half hour. Ah, the finished chicken looking really good. Going to give it a quick test here and then we’re going to throw a sauce together. This is what you’re looking for with the chicken. Uh the ice soft, tender, juicy. Of course, we’ve got the smoky flavor as well. But this is really, really nice. Each piece just pulls right apart. And that’s going to be really good. Okay, for the chicken teriyak glaze, we’re using a saucepan. Put a little bit of garlic. When the onion is transparent, we add all juice from our teriyak chicken. And we let it cook. When it comes to a boil, we use a whisk and we add cornstarch and water. And now we let this simmer for more of a natural reduction as well as thickening. I’ll go at least 5 minutes. And that right there is a very nice reduction of the chicken teriyak with the ginko tea. Put some of this in a small picture for service. Oh yeah. See it’s very nice coating this chicken. Oh yeah, that’s what you’re looking for right there. Ah, the finished rice peel off. Search the channel for the recipe. Plating up the chicken. I’m going to start with the rice peel off. Center of the plate. [Music] Adding some of this chicken teriyak around the perimeter here. Mhm. Should be enough there. Looking good. some of the extra sauce and a nice garnish. Of course, this was GKO tea infused. We’ve got the GKO leaf right here. We’ve got some lavender and a little tomato, fanned out tomato there. A little bit of fresh chopped basil for the rice. It’s amazing. My spatula. Well, this one here is about 10 to 12 years old. The problem is uh bacteria can uh food and bacteria can can accumulate down here where the wood meets the uh silicone. However, this is uh FDA approved foodgrade high heat silicone that goes to 500°. You can see the end of it just starting to wear a little bit. I like the curvature and the shape. So, I got with this manufacturer and we improved the design. Uh, here we go. This is the new design. These are about 10 in long, I believe. Maybe a little longer than that. The hole allows you to hang it if you like to add a little loop of leather or string in there. You can hang them up if you want to. But anyway, no more bacteria right here. The handle’s slightly weighted. It’s uh really really stiff. However, the head is slightly flexible. It’s got the curve that I like just like the other one there. You can see the curve really nice.
