


$50 worth of beef ribs I picked up on sale at market street yesterday. Realized my dome temp is 50 degrees off from the probe temp clipped on the grate. Had a bit of a panic when I realized it had been cooking at 300F not 250 for a couple of hours. So these were 300 for 2.5 hours and then 1.5 hours at 250-270F. At temp too soon for family dinner so sadly they are going in the cooler until 5. Hopefully it’s just as good then as it is now.
