Ingredients (2–3 servings)
250g long pasta (spaghetti, fettuccine, or linguine)
300g peeled and cleaned shrimp
2 tbsp butter (or olive oil)
3 cloves minced garlic
200ml heavy cream (cooking cream)
50g grated Parmesan cheese
Salt and pepper to taste
1 pinch of nutmeg (optional)
Chopped fresh parsley for garnish
Preparation
Cook the pasta:
Bring salted water to a boil and cook the pasta al dente.
Drain and set aside, reserving ½ cup of the cooking water.
Sauté the shrimp:
In a large skillet, melt the butter (or add oil).
Add the shrimp with a little salt and pepper.
Cook for 2–3 minutes per side until pink. Remove and set aside.
Prepare the creamy sauce:
In the same pan, add the minced garlic and sauté for 1 minute.
Pour in the heavy cream and reduce the heat.
Add the Parmesan cheese and mix until slightly thickened.
If it's too thick, add a splash of the pasta water.
Mix everything together:
Add the cooked pasta and shrimp to the pan.
Mix well to coat the sauce.
Adjust the seasoning with salt and pepper, and you can add nutmeg.
Serve:
Sprinkle with chopped fresh parsley and a little more Parmesan cheese.
