Wrong type of peppers. Bell peppers are sacrilege; if you’re adding peppers, you want roasted long hots
Edit: down vote me all you want, but you wont find a restaurant in philadelphia serving cheesesteaks with bell peppers. This is like adding beans and corn to your chili and calling it “texas chili”

I live near Philly. The cheesesteak market bleeds well into South Jersey. Not once, not ever, in all of my life, has anyone ever asked for peppers on their cheesesteak.

I would love a deep dive into how everyone outside of Philly and Jersey decided cheesesteaks needed green bell pepper as a default.
Don’t get me wrong, I enjoy a pepper steak, but it’s weird everyone got this same memo.
