This bread contains two types of flour: whole grain and bread flours.
This blend provides an abundance of fiber for digestive health, essential vitamins like B vitamins for energy, and minerals such as iron and magnesium to support overall well-being. Together, they offer a hearty, nutrient-dense base perfect for flavorful and healthful baking.
Sourdough starter:
– 70 g water
– 50 g sourdough starter
– 70 g bread flour
Ingredients for 2 fiber-rich breads:
– 420 g of water (+15-30 g additional)
– 60 g whole grain flour
– 540 g bread flour
– 120 g sourdough starter
– 12 g salt
– 20-30 g mix of seeds for cover the dough(optional)
Here’s a refined summary of my sourdough bread-making process:
1. Starter preparation is done in the morning and peaks by afternoon.
2. Flour and water are mixed and rested for 30 minutes during the autolyse to develop gluten.
3. All ingredients are incorporated in a mixer as demonstrated step-by-step in the video.
4. The dough ferments at room temperature for 2.5–3 hours during warm fermentation.
5. It is then pre-shaped, shaped, and placed in the refrigerator for 10–12 hours for cold fermentation.
6. The next morning, the oven is preheated with a baking stone to 250°C. The dough is scored and baked covered for 15 minutes, then uncovered at 230°C for another 15 minutes until golden brown.
7. Finally, the bread is cooled before slicing to enjoy its flavor and texture fully.
This method creates a light, digestible, and nutritious loaf with a rich flavor profile. Perfect for homemade bread!

Let’s make super healthy sourdough bread! The dough is well kneaded and is now ready for fermentation. During fermentation, I stretch and fold the dough 4 times to get a better crumb. The dough fermented perfectly and became fluffy I divide the dough into two parts, shape them, and place them in the refrigerator for cold fermentation for 12 hours.
