An Italian chef opens a school in Valencia to teach the authentic carbonara: without cream or bacon

The Italian chef Claudio Consorte has opened his first cooking school and gastronomic space in Valencia, La Cocina de Claudio, a place specialized in teaching authentic pasta carbonara and other traditional Italian recipes.

Located at number 35 Reus Street, in the neighborhood of La Saïdia, the establishment opened its doors on September 21. The aim of the center is the dissemination of Italian gastronomic culture through various educational and leisure activities.

The programming of the space will include a calendar of fresh pasta workshops, classes on Italian regional cuisines, as well as the organization of private events for groups and collaborations with other professionals in the gastronomic sector.

Claudio Consorte, founder of the project, has pointed out that its purpose is to “transmit respect for Italian tradition in a close environment”. The chef, with a track record of more than 400 workshops, seeks to promote the use of traditional ingredients such as guanciale and Pecorino Romano DOP cheese in the preparation of dishes such as pasta carbonara.

The courses are aimed at different audiences, with prices varying according to age (from 39 € for children, 49 € for young people and 59 € for adults) and offer gluten-free and vegetarian adaptations on request.

With a track record of more than 400 workshops and 3,000 students, Consorte now wants Spaniards to finally stop cooking carbonara with cream and bacon and make it for real.
