Had a fantastic brunch at Amber in Hong Kong this weekend and wanted to share as this restaurant doesn’t feature in this sub.
The experience was smooth from start to finish, with a well-paced menu and great attention to detail. The restaurant was recently awarded a 3rd Michelin star and I think it is well deserved.
One thing I really appreciated was the consistency in the kitchen – every dish felt carefully considered and well executed. We have visited Amber a number of times of the last 10 year and the steady, ever improving hand of the Chef Richard Ekkebus is visible.
The chef’s decision to go fully lactose-free is a smart and respectful nod to the region, and it didn’t compromise flavour at all. Quite the opposite, actually.
The uni dish was a standout – rich, clean, and beautifully paired with cauliflower and lobster.
For the main, we went with the pigeon “au sang”, which was tender and flavourful, complemented by preserved black winter truffle and artichoke. A great balance of earthiness and elegance.
One of the dishes is served in the kitchen and we met the chef, which added a personal touch to the whole experience. It’s clear the team takes pride in what they do, and it shows.
The chef was so kind to serve us an extra dish (Spanish prawn) that was one of the highlights of the lunch.
Amber is definitely worth a visit if you're looking for a high quality experience!
