Ma’amul: Quick Date Cookies
A delicious Middle Eastern treat with a semolina crust and spiced date-walnut filling.
Dough:
· 2 cups medium semolina
· 1 cup flour
· 50g corn starch
· 1/2 cup caster sugar
· 1 tsp (5g) instant yeast
· Pinch of salt
· 3 tbsp milk powder (optional)
· 300g unsalted butter, melted
· 1/4 cup rose water
· 1 tsp vanilla
Filling:
· 500g date paste
· 2 tbsp unsalted butter, melted
· 150g crushed walnuts
· 1 tbsp rose water
· 3 tbsp orange blossom water
· 1 tsp cinnamon
· 1 tsp anise
1 tsp Nigella seeds
· 1/4 tsp mahlab powder ( optional)
· 1 tbsp boiling water
Instructions:
1. Dough: Mix all dry dough ingredients. Add wet ingredients and combine. Cover and rest for 2 hours. Knead with wet hands until smooth.
2. Filling: Pulse all filling ingredients in a food processor until combined.
3. Assemble cookies and bake on a parchment-lined tray at 350°F (175°C) for 15-20 minutes until lightly golden.
