If you only have 30 minutes for dinner, but you want something healthy and comforting in this colder weather, you need to make this cheddar and broccoli soup. We’re going to start by chopping up the broccoli and grating the carrot. And then we’re going to dice an onion. Then finally, chop some garlic. Melt some butter in a pan. Add the carrot, the onion, and the garlic with a pinch of salt. Let this cook for 8 minutes. Add a tablespoon of flour. This will help thicken the soup. We want to let the flour cook for about a minute just so it doesn’t have that flowery taste. Then pour in some chicken stock. Add the broccoli. Let this simmer for 12 minutes. Then remove a quarter of the soup. Blend it smooth. Then add it back into the pan. Add some cream, cheddar cheese, some mustard, woristers sauce, mixy mixy. Once the cheese has melted, serve it in your bowl with black pepper, cheddar cheese, and crispy bacon. Look at that. That is absolutely banging. Lovely.

    250g broccoli
    1 onion
    1 carrot
    2 cloves garlic
    1 tbsp butter
    1 tbsp plain flour
    800ml chicken stock
    1 tbsp Worcestershire sauce
    1 tsp Dijon mustard
    75ml double cream
    100g mature cheddar
    Salt
    Black pepper
    4 bacon rashers

    Method:

    1. In a large pan, melt butter. Add onion, garlic, carrot, and a pinch of salt. Cook 8 minutes until softened.
    2. Stir in flour and cook 1 minute. Slowly whisk in chicken stock until smooth, bring to a gentle simmer.
    3. Add the broccoli, simmer 12 minutes until tender.
    4. Blend 1/4 of the soup until smooth, then return to pan.
    5. Remove from the heat. Then stir in cream and add cheddar, mustard and Worcestershire sauce. Stirring until melted.
    6. Ladle into your bowls, top with black pepper, crispy bacon and a little extra cheddar. Then enjoy, lovely!

  6. If you don't want to use heavy cream, try canned evaporated milk. It's thick like cream, and it's already cooked so it won't curdle. Plus, less fat.
