    I know them as Dino ribs I’ve done them twice and both times great bark and bone pulled right out of meat ,melt in your mouth. The guy at butcher shop suggested using rub called Dusted basically charcoal and salt adds amazing bark and flavor. I did mine at 225 for six hours ,uncovered first 3 hours ,wrapped last 3 hours . Your bark looks pretty darn good though. Looks yummy 😋 😍
