First time at filet mignon

  1. Picked up 3 medallions, around 2 pounds total, from Whole Foods. Wire rack uncovered overnight with coarse sea salt, 250 for 30 mins until 115 by instant thermometer, screaming hot cast iron for 45 seconds per side, butter + rosemary + thyme baste for 1 min, rest 5 mins and serve. Came out incredible!
