Beef and broccoli lo mein

    # Ingredients

    * 1.5 lbs flank steak (cut into 1/8″ thick slices)
    * 6 cups broccoli
    * 3 shallots
    * 1 orange bell pepper
    * 2 cups bean sprouts
    * 4 green onions
    * 6 garlic cloves
    * 1.5 lbs fresh lo mein noodles

    # Sauce

    * 3 tbsp low-sodium soy sauce
    * 1 tbsp dark soy sauce (I used La Choy)
    * 3 tbsp oyster sauce
    * 4 tbsp rice wine vinegar
    * 2 tbsp mirin
    * 1 tsp sesame oil
    * 1/4 tsp ginger powder (or fresh ginger, if available)
    * 3/4 cup water + 1 tbsp cornstarch (to thicken the sauce)

    # Instructions

    To prepare the beef, cut it into 1/8 – 1/4″ thick slices, about 1.5 – 2″ long. Add 1 tbsp of baking soda to the beef and mix well, then refrigerate for about 30 minutes. Afterward, rinse the beef under tap water to remove some of the baking soda. Pat it dry… it doesn’t need to be completely dry.

    Bring water to a boil in a wok, then blanch the broccoli for about 3 minutes. Remove it, then add the lo mein noodles to the boiling water. Cook all the vegetables and set them aside.

    Turn the heat to high and sear the beef until it develops a good crust. Once seared, return all the cooked vegetables, bean sprouts, and green onions to the wok. Pour in the sauce, mix everything together, and serve hot.
