Last weekend I’ve found obe big cup of fermented trinidad scorpion sause which was forgotten in cellar 👀🤣

Forgive my ignorance but anytime I make my hot sauce it just throw a bunch of super hot shit in the blender then cook with vinegar etc. very short version anyways.
Does going through all the fermenting process really make a bug difference in flavor ?

The longer some items age, the better they taste. Look at most aged alcohols such as whiskey. Cheese too. Extra old cheddar is amazing. I’d be interested to try an aged hot sauce.
