Hey everyone, welcome back to Alyssa Folio where we turn simple ingredients into something special. And today I’m going to share with you one of my favorite summertime recipes and that is a vibrant mango salsa. I love this salsa. It’s made with fresh ingredients and it’s literally the perfect mix of sweet, a little bit of spicy with a hint of tanginess from those citrus flavors. And all of this comes together in just a few minutes with a little bit of chopping and love. For this recipe, you’re going to need around um I would say around two mangoes, half a red onion, one sweet red bell pepper, um a jalapeno pepper, or maybe a srano pepper if you like a little bit more heat. Um some fresh cilantro. You’re also going to need some lime juice, orange juice, and salt and pepper on the side to taste. So, to make the salsa, you’re simply going to take some time, chop up all of your ingredients, and then you’re going to take a large bowl and add diced mangoes. I chopped mine into small cubes here. Thinly sliced red onions, cuz that’s just the way I like to eat them, but you can also finally chop these as well. A sweet red pepper for crunch. jalapenos that are chopped up, chopped cilantro, and then you’re also going to add a squeeze of lime juice. Please don’t use the bottled lime juice. Use a real lime. And then some orange juice here as well. Then you’re going to simply top this off with some salt and some pepper to taste. Give these a good mix by tossing and allow the salsa to rest, I would say, for around 10 to 15 minutes. And this will allow the flavors to meld together. And as a side note, this salsa actually tastes pretty good the next day. This mango salsa is super versatile. You can serve it with tortilla chips. You can serve it over grilled chicken or fish or even piled high on your favorite tacos. And it’s always a hit when I make this for cookouts and gatherings.
