You will not want to make this recipe if you don’t like lemons. This is my triple lemon chickpeas with baratha and green olives. And it is episode 75 of one pot, one portion. This series for people who cook, eat, or live alone and are tired of washing up. Triple lemon, I hear you say. Surely that is excessive. Well, my friends, to that I say, if there’s one thing I would love to have in excess, it’s lemons. Especially if those lemons are perfectly balanced by rich and creamy baratha, floral, fragrant coriander seed, and tangy green olives. And if I can scoop it all up with a hunk of crusty bread, then I may just be in heaven. We begin our surprisingly simple ascent by frying garlic, preserved lemon rye, and crushed coriander seed in olive oil before adding sliced green olives, good quality chickpeas, lemon zest, and lemon juice, and finishing everything with fresh parsley. Top that with baratha and enjoy. What I will say is
