Ingredients:
– (2) 16-ounce cans butterbeans drained and rinsed.
– 1 cup orange cherry tomatoes, sliced.
– 1/4 cup roasted red peppers, chopped. (I used jarred)
– 1 stalk celery, chopped with leaves.
(1) 6 ounce jar of marinated artichoke hearts, drained and chopped.
– 2 tablespoons red onion, chopped.
– 1 tablespoon celery salt.
– ½ teaspoon ground black pepper.
– handful of fresh parsley, chopped.
– 2-3 tablespoons extra virgin olive oil.
– 2-3 tablespoons red wine vinegar.

Add all ingredients to a bowl and gently toss to combine. Makes 6 servings.
