So weird how some people will complain about the slightest pink when it’s so much better at an even lower temp. Pork loin at 133 is so good

I just did this for the first time last week. I bought a whole pork loin because it was on sale at Costco and had no idea what to do with it. I found a website that instructed how to butcher it into chops and roasts and I made the roast last week. It was outstanding!
I too did 137º, but I marinated mine with a char sui sauce that I left in the bag when I cooked it for about 2. 5 hours. I then seared it with my torch and it was superb.

The last one I did was at 135F. I think this one had a firmer texture which I enjoyed. Very tender.
