The Texas A&M AgriLife Extension Service and McLennan Community College will host a Taste of the Mediterranean cooking class on Oct. 28 from 5-7:30 p.m. in Waco.

The class will be held at the AgriLife Extension office for McLennan County, 4224 Cobbs Drive. The cost is $25, and registration is required by visiting https://tx.ag/MediterraneanCooking or calling McLennan Community College Continuing Education at 254-299-8888. The deadline to register is Oct. 26.

Focus on the foundations of a Mediterranean diet        

Rachel Esquivel, AgriLife Extension family and community health agent for McLennan County, will serve as the course instructor.

She said the Mediterranean diet is based on culinary traditions from Italy, Greece and other countries bordering the Mediterranean Sea. 

“The Mediterranean diet concentrates on plant-based foods, such as whole grains, vegetables, legumes, fruits, nuts, seeds and herbs,” Esquivel said. “Food items such as fish, dairy, poultry and seafood are all eaten in moderation. Olive oil is one of the main sources of added fat in this type of diet.”

The diet has long been recognized for its health benefits, she said.

Participants will be introduced to the key ingredients used in dishes and learn how to prepare them. They will also leave the class with recipes to prepare at home.
