In a pot, add 1 teaspoon of olive oil, toss in 1 chopped celery stalk, 1 chopped carrot and 1/4 chopped onion. Once the onion becomes transparent, add 1 teaspoon of minced garlic, 1 1/2 teaspoons of parsley, 1/8 teaspoon of Italian seasoning, 1/8 teaspoon of salt and 1/8 teaspoon of pepper. Stir and pour in 2 1/2 cups of chicken stock. Lastly, put in 1 chicken thigh and 1/3 cup of rice. Simmer for 20 minutes. Remove the chicken thigh and shred it and toss it back into the pot. Once the chicken has reheated, serve.
