The next morning starts with breakfast with my son before he leaves for university, followed by a gentle countryside walk with Alma. After work, my husband and I prepare a simple autumn dinner and enjoy it together – a perfect end to a day of slow, mindful living.

📝 Ingredients – Healthier Dairy-Free Chelsea Buns
375 g strong white bread flour
125 g strong brown flour
7 g dried yeast (fresh yeast gives even better flavour)
½ tsp salt
2 tsp ground cinnamon
½ tsp ground mace
½ tsp ground cloves
½ tsp ground nutmeg
½ tsp ground ginger
250 ml lukewarm oat milk
70 g erythritol or xylitol (or sugar if preferred)
1 egg (optional)
60 g soft plant butter or coconut oil
For the filling:
Melted plant butter for brushing
Grated apples
Brown sugar or chosen sweetener
Ground cinnamon
Raisins (or chocolate chips for a fruit-free version)
Chopped pecans (rich in magnesium & vitamin E)
For the glaze:
Juice of ½ lemon
Hot water
A few tablespoons erythritol
Optional: a little grated apple for extra flavour

📝 Ingredients – Fresh Fig Salad
Mixed lettuce leaves or rocket (arugula)
Fresh creamy goat’s cheese (or blue cheese, burrata or brie if you prefer)
1 fresh fig per person
1 Pink Lady apple per person (or your favourite variety)
A handful of pecans (rich in magnesium & vitamin E)
For the dressing:
Balsamic vinegar (for him)
Organic apple cider vinegar (for me)
Extra virgin olive oil
1 tsp honey
½ tsp wholegrain mustard
Salt & freshly ground black pepper to taste ( optional )

This morning is a little chilly, but it looks like no rain today After an unusual morning, I’m preparing Chelsea buns — a healthier, dairy-free twist 375g of strong white bread flour (high-protein for perfect buns) 125g of strong Wholemeal flour (adds depth and fibre to the buns) 7g dried yeast (use fresh yeast for a richer, more authentic flavour) ½ teaspoon of salt (to balance the flavours) 2 teaspoons of ground cinnamon (warm spice for classic Chelsea buns) ½ teaspoon of ground mace (adds a subtle, nutmeg-like warmth) ½ teaspoon of ground cloves (for a warm, aromatic flavour) ½ teaspoon of ground nutmeg (adds a warm, fragrant touch) ½ teaspoon of ground ginger (for a gentle, warming spice) 250ml of lukewarm oat milk (perfect for gentle, dairy-free buns) 70g of erythritol or xylitol (or sugar, for a sweeter option Warm oat milk with sweetener goes into the dry mix 60g Soft plant butter or coconut oil brings it all together. Marcos departed yesterday, yet we shared some truly wonderful moments before he left We went shopping for a wardrobe refresh — feeling so happy in this moment I wish time had slowed down — embracing a slower, more mindful moment. What truly matters is to live those moments fully and nurture your own happiness And the moment came with my son feeling nervous, it became an emotional and heartfelt experience for all of us My son travelled to Porto, Portugal, where our family awaited him for a memorable journey on to Galicia, Spain Sorry — I wasn’t able to keep recording With wholemeal flour the dough absorbs more liquid, so gently add a little extra milk as needed If you prefer the classic Chelsea buns recipe, I have a video with it. If you’ve missed it, I’ll leave the link in the description box The dough rests for an hour in a warm place Now the dough is ready — let’s see if something beautiful comes from this The satisfaction of creating with your own hands and sharing the beautiful results with others It brings a feeling of purpose and overall well-being Brushing the inside with melted butter before sprinkling sugar, grated apple and raisins. For Alex, a chocolate version — he doesn’t like fruit. Grate one or two apples and mix in some raisins. Oops, a little apple landed on his chocolate portion — let’s keep it our secret 😅 Lightly sprinkle brown sugar (or your favourite sweetener) and a touch of cinnamon for extra flavour. Let it rest for 30 minutes,This resting time helps the dough rise beautifully, creating a light and airy texture For the glaze, choose egg, egg with milk, plain milk, or a plant-based alternative for a vegan-friendly finish Using egg and milk creates a glossy, brioche-like finish Bake at 180°C (gas mark 4) for around 30 minutes, until beautifully golden Time to make the glaze — apricot jam works perfectly for a shiny, sweet finish The classic choice is icing sugar blended with hot water for a simple, sweet glaze Today, I feel inspired to experiment and try something new in the kitchen Mix half a squeezed lemon with hot water and a few tablespoons of erythritol for a gentle, sweet touch I’ll add freshly grated apple to our glaze for a natural, fruity touch Chelsea buns — a classic British treat, perfect for a cosy tea moment. I promised Alex his own version — now let’s see if it brings him a little joy The kitchen smells like autumn, making this moment even cosier. I’ll make Chelsea buns for Marcos at Christmas, though he prefers the classic recipe Sprinkle a touch of icing sugar, or use your preferred sweetener, for a gentle, sweet finish Seeing Alex enjoy them makes it all worthwhile Even my husband craves coffee with this aroma. Even little Alma can’t resist — the wonderful aroma fills the kitchen Alex leaves for university in a few days, so we’re cherishing these moments. Breakfast to start the day with energy: cottage cheese, nuts, berries and chia seeds. Sometimes we overlook these simple moments, yet they’re the most important. Alma is very cuddly today — do your pets do the same? A tiny chocolate house, perfect for sweet little daydreams It doesn’t matter how big a house is — what counts is that it feels like home Just like the chocolate house from the tale — tiny, warm, and cosy I should head to work, though I wish I could linger here a bit more After a day at work, a light and delicious autumn dinner simple and delicious My husband’s finger is sore tonight, so I’m making dinner. While he prefers individual plates, I wanted to use the serving dish my family gave me. Let’s make a fig salad — crisp lettuce or peppery rocket with creamy goat cheese. You can also use blue cheese, burrata or brie — I love them all Figs first arrived in Britain with the Romans over 2,000 years ago — bringing a taste of the Mediterranean to these shores One apple each — I’ve chosen sweet Pink Lady Today, British growers cultivate figs in greenhouses, making this once-exotic fruit part of everyday life Packed with nutrients yet naturally sweet, figs are a treat to savour mindfully. Hello sweet Maria~~ I understand the heartache it is seeing your sons leave… I remember when we moved our only child, our daughter three hours away I was fine moving her items into her apartment, then we went to eat dinner and the time came for us to leave for our travel home, I started crying like a baby 🤭 her being there in a big city knowing no one! She has now been there for sixteen years and now married going on five years… so happy!! Your hubby made me giggle with his little dance, my hubby isn't a dancer at all! The buns and salad both looked delish, thank you for always sharing your recipes, your walks in the quaint little areas seeing the homes and I agree with you the size of a house doesn't make it a home. When I was younger I wished we lived in a bigger house, but now I am thankful for our home… for I can only be in one room at a time!!
