✨Roasted Garlic & Whipped Ricotta Agnolotti✨

These agnolotti are melt in your mouth delicious! Definitely one of my favorite fillings and so cozy for fall. My original recipe calls for garlic confit, but I only had bulbs and didn’t feel like peeling them so I roasted them instead! Just as delicious! 🍝🧄

Ingredients:

– 1 cup ‘00’ wheat flour
– 1/2 cup semolina flour
– 2 eggs, 2 yolks
– 1/2 cup garlic cloves, peeled
– 3 tbsp. extra virgin olive oil
– 1 cup whole milk ricotta
– 1/4 tsp. salt
– 6 tbsp. butter
– 2 tbsp. Parmigiano Reggiano, grated
– Crushed red chili flakes to taste
– 1 tbsp. Italian Parsley, finely chopped’
– Extra virgin olive oil, to finish
– Pasta water as needed

These roasted garlic and whipped ricotta annual latte are melt in your mouth delicious. Roasted garlic in your pasta filling is such a game changer. I blended the roasted garlic with ricotta, parmesano, and salt. And I wanted the filling to shine, so I cooked the anulotti and tossed them in a simple parmesano butter sauce. Topped it with some parsley, chili flakes, and a drizzle of olive oil. Enjoy.
