Nice work. A few questions: 1. How did you get that perfect sear? Looks like you used heavy seasoning and cranked up the heat. 2. In relation to tender and moist how does it compare to a brisket or a pork butt?

What was the order? Sear on grill, finishing the oven? Or completely on the grill? I love this cut- not the tenderest piece but the flavor kicks ass. My fourth try was slow cook on the grill, then high heat to sear and flavor. Tell me more…

I love cutting into 1in steaks with the grain and grilling on charcoal, with only salt. The final cut on your plate will be against the grain. This is the way my Brazilian friend taught me.
