Easy Chocolate Bundt Cake (WFPB)

3/4 cup soy milk (or any non-dairy milk but soy works best!)
1 tsp apple cider vinegar
*1 cup spelt flour
3/4 cup maple or date sugar
1/3 cup dark cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup creamy almond butter
1/3 cup applesauce (this is the egg replacer)
1/2-1 tsp Vanilla extract
1 tbsp instant decaf coffee (optional)

*If you don't have spelt flour you could probably sub with Whole White wheat flour.

Let the soy milk and Apple cider sit for a few minutes to create a buttermilk. Soy milk works best! Mix wet and dry ingredients together.Bake in a 6 or 7 inch bundt pan or 8 inch cake pan at 350F for 32-35 minutes or until toothpick comes out clean. Let cool and frost with your favorite frosting or the one of the ones below!
