So I've been pumping wood into my Shirley offset for probably 8 years and decided I'm ready for an easier pace of life. But probably never going to be in the pellet phase, so I sold the Shirley and picked up a backwoods smoker g3 party.
Going to be a quick learning curve with her first competition in 2 weeks. But I've been using the wsm, drum smokers and just about every other kinda cooker out there so I'm not overly worried. BUT I am pretty damn excited.

    I’m a noob with a pellet smoker, used it maybe 20 times. How does this or an offset compare to a pellet smoker?

    It’s what I use. I love these darn things.

    FYI these things really want to be at 250. They’ll fight you if you want to cook at 225 and 275. When you start seeing the temperature creeping up, it’s time to add more water. The water tray will probably last you about 8 hours before refill.

    If you do a full hand packing of B&B briquettes, you can get about 18-24 hours of burn time. I strongly advise using more wood chunks than you think for a good smoke flavor.

    Putting it higher up will give you a more smokey/barkey, closer to the water pan doesn’t give you as well.

    Humphreys sells a pretty slick adapter for the fan attachments.

    Only real downside to this smoker is that water pan. It’s a nightmare to remove from the smoker without sloshing fatty water everywhere.

    I’ve got the same one, and love it! Just a piece of advice…

    The water pan is a PITA to take out, especially if it is partially full. You end up spilling water into the fire box. I bought a full size stainless sheet pan from Amazon, which I put inside the backwoods water pan and fill with water. It’s slightly smaller , so it’s easy to remove from above.

    And your racks are in backwards
