




wanted to lay off the booze a lil this week (:
got these two strips on sale and thought I could make something of them. first one failed miserably a few days ago and I tossed it, this one was only mildly better. maybe if i'd cut them a bit thinner, i think i'm also just used to ribeyes and prefer the fat. all in all, looks better than it was, the sear was shit which didn't help
wish I'd had a third from the same strip to test on the grill for comparison. these are sort of the first decent looking steaks i've made with the SV that just didn't meet my standards
2.5 hrs @ 129 in the bath from frozen, 10 mins in fridge in paper towels, 10 mins drying on a rack in fridge before sear(another mayo sear)

This is perfect temp. I wish you cooked it slightly less and then seared it but I would eat this steak 3x. Well done. I need a sous vide machine thing myself
That’s nothing to be ashamed of it’s very respectable but as you said it’s not a ribeye.
It looks good. Personally i just cant seem to get the whole SV steak thing down, they look funny, and the fat doesnt render the same for me. I realise, more time, higher temp, blah blah blah…. i just cant seem to master it.
Now a steak in the cool zone on my weber kettle for 10 min a side, then over the coals for 1 min a side to sear it up. Damn that is good!!!!
I saw whatever method works best for you, …well stop doing the other methods that arent the best!

I like the color and eveness in the center, nicely done imo. Really needs just a bit more crust and it would be perfect

Someone explain to me the benefit of the sous vide for steaks. Like why use that over a cast iron or a grill?
Full disclosure, I own one, but I’ve only used it for other things. I feel like sous vide steaks I see on here never have great sears. Am I missing something? Do restaurants that use it just have the technique down better than the rest of us? Super hot pan, not overdoing the sous vide?
Like, if OP had a pan hot enough to get a good crust on this steak, he wouldn’t have the cook level he wanted. I want to try it, but am skeptical it’s going to be better than my weber kettle.

Not sure about how the sous vide is different, but after you get it to temp, let it rest on a plate for 5 minutes while you warm up a stainless steel pan on medium high with vegetable oil or grape seed oil, once the oil lightly starts smoking put the steak in pan for 1 minute 15 seconds then flip and do to the other side
Sous vide is trash man, it’s like boiling the steak. Just sear on both sides in a cast iron or stainless pan.

not much overall, but a relatively insane amount of water and power usage for one steak lol
