Let your oven do all the work with this delicious Moroccan spice shoulder of lamb. Prepare the marinade. Mix until well combined. Score the lamb shoulder. Then rub the marinade all over. Place the red onion wedges around the lamb. Cover and roast for 3 hours. Let the lamb and onions onto a board and rest. Prepare the couscous. Add boiling water to cover the couscous.
