

Trying my hardest to perfect my ghost Face score. Anyone have any tips?
My first loaf broke apart my score so on my second i still did my expansion score around his head, but then added additional expansion score during the first seven minutes of bake time. It kept him intact, but it also made my loaf a little flat. I also need to spritz with a little water before sprinkling my Thai rice flour so it sticks better. Next time I’ll try just a line for his mouth as well I don’t like how wide it got.
Double Chocolate Chunk Loaf
Bloom 50g cocoa powder and 50g brown sugar with 100g hot coffee.
Add 350g room temp water, 100g peak starter, 500g bread flour, 10g salt.
Mix until no dry flour remains.
4 sets of stretch and folds 45 minutes apart, adding 100g chocolate chips during the final stretch and fold.
Bulk ferment at 68 degrees for 11 hours.
Shape, score, bake in DO, covered for 40 mins at 500, then lid off, 10 minutes at 425.

Honestly, I’d eat this flat loaf any day between a cocoa coffee and chocolate chips, I bet it taste just as good as it looks spooky.
