It contains protein, multiple colours of vegetables (fibre, vitamins and minerals) and some simple carbohydrates along with flavour. Scale the ratio of meat/veg/rice to suit your needs. Basmati rice could make it more diabetic friendly. Easy and low fuss. Adaptable. Ingredients are easy to store and have on hand – could even use microwave rice for a really easy dinner. Leftovers can be handy for lunch the next day and probably good for a few days after. Love it.

Can also use shredded, cubed of slivers of chicken or pork. Less expensive per pound. Also, frozen cooked small deveined shrimp.
