Kısır is a popular Turkish dish — a light and nutritious bulgur salad. Loved for its freshness, vibrant herbs, and rich flavor, it’s often served with tea, at family gatherings, or as a healthy dinner. Similar to tabbouleh, but with a unique Turkish twist thanks to red pepper paste and pomegranate molasses.

Recipe for Kısır

Ingredients:

1 cup fine bulgur

1 cup hot water

2 tbsp tomato paste

1 tbsp red pepper paste (optional)

3–4 tbsp olive oil

2 tbsp pomegranate molasses (or lemon juice)

1 cucumber (finely diced)

2–3 green onions

1 tomato

A bunch of parsley

A bunch of mint

Salt, black pepper, red pepper to taste

Instructions:

1. Pour hot water over bulgur, cover, and let sit for 10 minutes.

2. Mix in tomato paste and red pepper paste.

3. Add olive oil and pomegranate molasses, season with salt and pepper.

4. Stir in cucumber, tomato, green onions, parsley, and mint.

5. Mix well and serve chilled.
