Came out a bit more like floss then I had hoped but thought it was a good first attempt. It was fluffy, dry and flavorful

Process was: catch fish and fillet, smoke over low heat and then take off heat and rest and then put back in smoker and repeat until you have a hard puck of a fillet, then use bonito box to get your shavings.

    Aspergillus fungi and time is a huge missed step here.  That’s why you have floss and not flakes.  Basically it strips all the moisture from the fish making it almost a block of wood.  Nothing wrong about what you did though, it was surely tasty!

    So that’s how it’s done!! Does it work with other type of fish?

  3. I would try freezing the fish before shaving to get longer flakes.
