Here’s a classic Greek Watermelon Salad recipe that combines the refreshing sweetness of watermelon with the salty tang of feta and the herbal brightness of mint or parsley. It’s simple, vibrant, and perfect for summer.
✅ Traditional Greek Watermelon Salad Recipe
📝 INGREDIENTS (Serves 4)
● 4 cups watermelon, cut into bite-sized cubes (seedless preferred)
● 1 cup cucumber, thinly sliced (optional, but common in Greek versions)
● ½ cup feta cheese, crumbled or cubed
● ¼ cup red onion, very thinly sliced
● ¼ cup fresh mint or parsley leaves, chopped or torn
● 1–2 tbsp extra virgin olive oil
● 1 tbsp fresh lime or lemon juice (optional, for acidity)
● Salt & black pepper, to taste
● Kalamata olives about ¼ cup, pitted

1. Prep the ingredients:
● Cube the watermelon and place it in a large bowl.
● Thinly slice the cucumber and red onion.
● Crumble or cube the feta cheese.
● Tear or chop the mint or parsley leaves.
2. Assemble the salad:
● Add the cucumber, red onion, feta, and mint or parsley to the watermelon.
3. Season and dress:
● Drizzle with olive oil and lime/lemon juice (if using).
● Sprinkle with a small pinch of salt (feta is salty already), and cracked black pepper.
4. Add Kalamata olives for a more savory Greek twist.
5. Serve immediately, or chill for 10–15 minutes before serving. Don’t let it sit too long, as the watermelon releases water over time.
Hi everyone. Welcome to Healthy and Delicious with Jana. Today we’re going to do Greek watermelon salad. This is actually one of my favorite salads because instead of traditional Greek salad, we’re going to use chunks of watermelon. This salad is super easy to make. It’s refreshing, crisp, and cooling. For this recipe, we’re going to use watermelon, cucumbers, red onion, lemon, fresh parsley, feta cheese, calamata, olives, extra virgin olive oil, red wine vinegaret, and salt and pepper. Okay, let’s start making it. Let’s cut the watermelon first. I like watermelon because it’s a nutritious low calorie fruit rich in water about 90% making it great for hydration. It also provides vitamin C and vitamin A, potassium and magnesium along with antioxidants like lycopen and the amino acids. Those vitamins and minerals are supporting the immune system and reducing cellular damage. Watermelon is high in sugars, but at the same time, it’s low in carbs and fat. This is one of those salads that you can combine ahead of time. Since it has no lettuce, you can toss these ingredients together and store them in the fridge for your lunch for the next day. They get even better as they sit. Oh, wow. Look how beautiful it looks. The easiest way to remove the skin, you’re just doing like this. That’s how my mom taught me to do. So, and this way you can remove the skin from watermelon. Now, we’re going to cut into little cubes like approximately 2 in. First, we’re going to cut like this. And then, we’re going to cut little cubes. We’re going to put it in a bowl. Now, we’re going to cut this part in a different way. So, you’ll choose which one is going to be easier for you. We’re cutting this pieces approximately 2 in. And then you remove skin like this. This is the easiest way for me. Let’s cut watermelon into squares. But don’t worry if the squares are not perfect. It’s not about perfection, it’s about taste. Okay. Now, when we have our watermelon in a bowl, we’re going to continue with the cucumbers. I like to peel the skin off, but not completely. First, we’re going to cut the ends. And now I’m going to use the peeler and we’re going to remove the skin like this with the stripes. It creates a texture. And when you cut the cucumbers, they look very nice. And now we’re going to cut little circles, like tiny little circles, and put it in a bowl. Look at those vibrant colors, red and green. It looks so summer, so fresh. I love it. Now, we’re going to use our red onion. We peeled the skin off and we’re just going to use those little tiny stripes of red onion. Our red onion is cut off and make me cry a little bit. Now, we’re going to add some calamata olives into the salad. I love calamata olives. They already peed, but at the same time, they’re very fresh. Now, we’re going to cut some parsley. We’re going to use only leaves. I like to cut it couple of times, so you make those pieces are very, very tiny. It’s time to prepare our dressing. We’re going to use red wine vinegaret or you can use red wine vinegar as well. Don’t forget to shake it first. has a very nice red color. You’re going to use some extra virgin olive oil. And now we are squeezing the lemon juice. So this is the easiest way. You put the fork and you turn it like this. We are going to whisk it. Continue whisking until you see that it’s smooth and uniform. Now it’s time to put our dressing into our salad. Now we have to mix it. Just make sure you mix it carefully so you don’t break the watermelon pieces. And the final step is to put some feta cheese. I like crumbled feta cheese.
