That’s what Greek domates are all about. These small rolled delights are a staple in Greek mezz which are small dishes meant for sharing during lively gatherings. To make doles start with grape leaves you can find them fresh which means they need to be blanched in boiling water for a few seconds to soften or you can use Jared grape leaves that are already rinsed and ready to go. Fresh leaves should be rinsed thoroughly and blanched for about 30 seconds to make them pliable. The filling is what makes dol special. Traditionally, it’s a mixture of rice that is partially cooked or par-boiled combined with finely chopped onions, fresh herbs like dill, mint, and parsley and seasoned with salt and black pepper.
