Makes 6 Muffins
1 sausage patty
4 eggs mixed
~1/4c raw spinach finely chopped
~6 T of hash browns
Monterrey cheddar cheese
Sundried tomatoes
Feta

Preheat oven to 375. Line bottom of a cupcake tray with hash browns (precooked). Cook sausage patty, ground it up, and spread evenly over hash browns. Beat eggs and mix in chopped spinach. Pour egg/spinach into cup holders – this should fill the holder to about 3/4. Top with Monterrey cheddar and sundried tomatoes if desired. Bake for 15 min. Remove from oven and top with feta.
