Los Angeles, renowned for its rich cultural tapestry, continues to solidify its status as a culinary hotspot, attracting food enthusiasts from around the globe. Among the city’s diverse dining options, Hinodeya Ramen stands out as a cherished establishment for ramen aficionados. Recently, the restaurant expanded its presence by inaugurating a second location in the vibrant Little Tokyo.

Hinodeya Ramen is celebrated for its authentic dashi-based ramen, a traditional Japanese broth crafted from a blend of bonito flakes, kombu (kelp), and scallops. This dedication to preserving authentic flavors has garnered a loyal following.

The new Little Tokyo branch will give you the opportunity to indulge in these rich umami flavors within a cozy and inviting atmosphere, where your taste buds can experience the authentic recipes dating back to the 1880s.

As explained on the restaurant’s website, the origins of Hinodeya Ramen trace back to 1885, when it was established near Hasuda Station in Saitama, Japan. Initially a modest dining spot, the establishment evolved over the years under the stewardship of the Kuribara family.

In 1919, Kintaro Kuribara succeeded his father as the second-generation owner, expanding the business and enhancing its offerings. By 1949, the restaurant underwent significant renovations, including the addition of tatami rooms and an extended menu that featured alcoholic beverages and soba noodles.

In 2006, the fourth-generation owner, Masao Kuribara, took over the family business and rebranded the establishment as Sasala, marking a new chapter in its history. Despite the rebranding, the legacy of Hinodeya’s traditional flavors and dedication to quality continued under the Sasala name. Today, Hinodeya Ramen operates multiple locations, including two branches in L.A., of course, as well as San Francisco and Dallas.
