It’s been a while since I made a broccoli rice chicken cheddar casserole. Last night I made it for my girls and we just simply could not stop eating it. It was so delicious, so flavorful. And I’m going to show you guys how I made it. Now, there’s many ways to prepare. This is how I prepared mine. I started by searing some chicken thighs. I seasoned with chicken seasoning as well as garlic pepper seasoning. Seasoned and cooked the chicken on both sides until they were done and had a caramelized color. Something like this. Once my chicken was done, I removed and start working on my sauce. I added some butter. I also added some chicken fry, which is my version of seasoned flour. I added heavy whipping cream. Guys, keep in mind I’m not measuring. I mixed everything together until I got the lump salt. I went in with a can of cream of chicken soup. mixed cheeses, which is Kobe Jack cheese, mozzarella cheese, and sharp cheddar cheese, and kind of mixed that all together until it was this consistency, just like this. I added my rice, uh, steamed broccoli, and cut up chicken pieces into the bowl, added that cheese sauce, seasoned with a little bit more garlic pepper seasoning, and then I began mixing. You may want to do this in batches. I did reserve a little bit of that cheese sauce just in case I was going to need it later. Once everything was mixed up, this is how it looked. I transferred it to a baking dish, topped with some more cheese, baked on 350 until the cheese melted, and everything turned out so good, y’all. 10 out of 10. I highly recommend. Enjoy.

  2. My dad used to make this in a huge pan when I was young. He made it at least once a week. That pan did not stand a chance everytime!! Good memories.
