You leave that cap on before portioning? Just asking because it seems like alot of fat for service.

A chef and can’t get a better sear than this?
    Awkward..

No offense, but I’d be kinda pissed if I ordered this nice piece of meat in a restaurant and it came out cooked like this. No sear and gray bad but sure it still tastes good

    Looks great. 4real. Nice job.

Made me think of “Slums of Beverly Hills” (1998) “I’m their father! I’m their father!” Loved/miss that BOH discount.

This sub is so anal sometimes. There are different ways of cooking a steak. This sear is fine. I hate the way anything less than a charred mess on the outside gets massive criticism.

Also (whilst I’m ranting) anything over med rare gets slated for being overcooked and “ruining good meat”, anything less than rare (and sometimes even rare) is slated for being “still mooing” or “that’s raw bro”. Please learn to stop dictating your personal preferences as objectively correct.

Sear schmere… some reddit peeps make me laff. I’d be happy with this steak, since most steak houses suck at med rare. Nice work, chef!

mate, i dunno in your country but in mine trimming someones fat like that is what we call criminal activity.

i have to disapprove your steak.
