They’re called Mercimek Köftesi — the lentil bites everyone falls in love with. Soft, fresh, and addictive, shaped by hand and served with lettuce, lemon, and pomegranate molasses.
✨ Full recipe:
– 2 cups red lentils
– 5 cups water
– 2 cups fine bulgur (köftelik/kısır)
– 2 onions, grated
– 4 tbsp olive oil
– 1 tbsp pepper paste
– 1 tbsp tomato paste
– Handful fresh parsley, chopped
– Handful fresh mint, chopped
– Chives & green onions, chopped
– Salt, black pepper, pul biber, cumin, paprika, dried mint, sumac
Steps:
1. Boil lentils until soft.
2. Fry grated onions in olive oil, add tomato + pepper paste.
3. Mix lentils with bulgur in a tray, cover, rest 30 minutes.
4. Add the onion sauce, herbs, and spices.
5. Mix with hands, shape, serve on lettuce with lemon & pomegranate molasses.

Soft, the lentils go into a tray with fine bulg mixed, covered, and left to rest. And I pour over that rich onion sauce. Add fresh parsley, mint, chives, green onions, and spices.
