Smoked boneless beef ribs and braised them in curried stock for a delish noodle dish.

Smoked ribs:

-Coated with 2x black pepper / 1x Holy Gospel
-Smoked at 250 until 203 degrees on a wire rack
-Spritzed a few times with ACV

Curried Noodles:

-Used a recipe from Jeremy Pang
-Subbed the meat in the recipe for the smoked beef chunks

Ribs were perfect in the curried noodles and essentially became smoked short ribs after braising for about four hours.
