We're an Italian family living in Malta, and we’ve made a big change: we’ve stopped buying pasta and started making our own! We enjoy it fresh on the same day and dry the extra for later.

This pasta shape is called Paccheri Lisci, extruded through bronze dies and made with just two ingredients: Durum Wheat Semolina (Semola di Grano Duro) and water.

Paccheri is a wonderfully versatile pasta shape — perfect with a simple tomato sauce, rich fish or meat ragù, creamy vegetable sauces, dried fruits, shellfish, or even stuffed with your favorite fillings.

This machine also has an automatic cutter, but it can’t be used for large shapes like these.

Stay tuned for more family-made delicacies! 🇮🇹❤️🇲🇹

I can’t wait to see what you make with this.

I saw a recipe for pacherri with cuttlefish ragu recently that I want to try.

What is the pasta maker that you’re using called?

When I think of homemade it’s a nonna rolling pasta and no pasta extruder

Looks great. May I ask what hydration you’re using?
