You’ve heard of Mary Me chicken. Now it’s time for marry me chickpea soup in the slow cooker. Okay, now this is a vegetarian soup, but no one has to know that we’re using a vegan spicy sausage. You’ll cook it until brown and then add that to your slow cooker along with some potatoes, chickpeas, and all your other flavorings. We’re doing some sun-dried tomatoes, garlic, spices, and broth. Let that cook all day, but do be warned that your house is going to smell so good that you might have neighbors knocking on your door asking for a serving. Right before plating it up, stir in some kale, cream, parmesan cheese, and fresh basil. And you know what? I’ll even go on record to say that if you liked my Marry Me chickpeas that went insanely viral a few months ago, you’re going to like this more. Let me know if you try it out and happy cooking.
