Pasta with borlotti beans and red onions: single course dinner

This is one of my favourite vegan mediterranean style single course dish with carbs, proteine, olive oil and fibres. You can meal prep with tons of dish, you just need a big pot! I hope this recipe explains how easy and economic is mediterranean diet.
This is the recipe for 1 portion. Photo is 3 portions with 1L of water (~350ml/portion). Adjust as you like. Say X the cooking time of pasta.
Put 50g of borlotti beans in lot of water and let it rest for at least 12 hours. Cut 200g of red onions as you like and put with 5ml of olive oil in a hot pot. Let the onion’s pieces became soft for about 5 minutes, then put 250ml to 350ml of water depending on how liquid you like the outcome. When the water boils put some spices (not salt!!! It will destroy your beans. Also, the recipe is already teasty without salt), I like rosemary and pepper. Now put the beans and let it boil for 60-X minutes. After that put 80g of pasta and cook for another X-2 minutes, then stop the fire and wait at least 2 minutes.
If you’re using beans in can, then you skip the 60-X boiling time.
Please, be aware that if you put too little water then beans/pasta may burn. You can adjust water as you’re cooking, however it’s best to put the right amount at the start.
