





Roast chickens, which I then broke down to use for greek bowls with roasted veg, lemon potatoes and greek yogurt dressing. Used the carcasses for chicken stock along with some leftover veg from last week. Also, herb and garlic focaccia, and lemon blueberry muffins with a lemon glaze drizzle!

Chicken: Stuffed the cavity with half a lemon and 1/4 white onion. Did an herb & melted butter rub on the skin, then Roasted at 350 until cooked through.
Is focaccia easy to make? I’ve been making more bread lately and want to play with this. Do you refrigerate it or just leave it out?
