




Holy moly these came out so well. First time smoking skin on bone in thighs. Did a base of kosmos Q spg and let them dry out in the fridge for a few hours. Before smoking I finished them with kosmos Q dirty bird.
Used bear mountain apple wood pellets
Popped them on the searwood on smoke boost for 30 mins, bumped the temp to 275 for another 45 mins and then to 400.
Once they hit 180 internal, I glazed them with a bbq sauce that I thinned with acv and a splash of Chipotle Tabasco.
Skin was so crispy and they were so juicy I couldn't believe it.

Nice. That salad also looks amazing.
I smoke mine at 500 for ten minutes, flip for five, and then brush on the BBQ sauce and smoke for another five. They come out great. I use the Pit Barrel All Purpose seasoning. I found thighs are the best and easiest to smoke.
