Rammesan pesi or Turkish pa bread is one of my absolute favorite no need bread recipes. It’s so simple to make and you can master it in no time. Start by mixing milk, water, and instant yeast. Milk makes the dough a lot softer and more tender. Then add the egg white. Save the egg yolk, a little bit of olive oil. Give it another mix. And then go in with the dry ingredients, which is flour and salt. Give it a good mix just until it comes together. There’s no need to knead this dough. Cover and let it sit until it doubles in size. Just as you can see here, the dough is pretty sticky at this point, so don’t worry. Just make sure to flour your surface really well. And then bring the dough together. As you can see here, it’s very important not to add too much flour to the dough cuz you still want the bread to be very soft and very fluffy. So just use enough flour for you to be able to bring the dough together easily to give rama pa seed that beautiful color. Mix some yogurt with the egg yolk that you saved from before and a little bit of water. Place the dough on the baking sheet. Spoon some of the glaze on the dough and with your fingers spread into an oval shape with about half an inch thickness. The glaze will help you spread the dough easily and the dough will not stick to your fingers at all. Make sure the dough is spread completely into half an inch thickness because it will rise as it bakes. Then using your fingers, first make indentations on the dough about 1 in from the edge to make a circle. Then with your fingers, make diagonal indentations in two different directions to make diamonds inside that circle. Make sure that you’re going deep here because you want the bread to keep its shape and that signature look once done. Then top with sesame seeds and nigella seeds and bake it in the oven for 25 to 30 minutes until it’s golden on top. Once out of the oven, you can keep the bread covered to keep it soft. It is so delicious. This bread is perfect for breakfast with some cheese, walnuts, jam, butter, honey. It’s just a perfect addition to your table. Give it a try and as always, enjoy.
