    Also, reminds me of how i tried to replace folds and kneading with flipping the dough.

    I wondered about mixing dough in a cement mixer in my bakery. It appealed to me because it would be extremely gentle compared to a spiral mixer. There would be no impetus for the dough to ever tear

    It doesn’t seem to be kneading. It looks like dough just sliding to bottom. Maybe the inside needs humps to get it to fold?

  11. isnt the point of spiral mixers to push air intot he dough? this feel like it would just spin the dough
