Today I’m making an oldfashioned southern favorite, leather britches. I start by preparing my green beans for drying. Just snipping off the stem in and blossom in. Once they’re dried and then later soaked overnight, they’re ready to cook. In my pot, I fry up some good hickory smoked bacon until it’s nice and crisp. Toss in a little bit of onion, clove of garlic, added for flavor. Next, go in the soaked green beans. And I put plenty of chicken stock over them to cover them. Bring it all to a boil. Let it simmer slow and easy until the beans are tender and full of smoky flavor. It’s a true taste of oldtime country cooking. Simple, hearty, and absolutely delicious.
