Made some cowboy candy, but subbed 1/3 of the jalapeños for ghost peppers. Plan to serve it over smoked cream cheese, so should mellow it a bit.

    I did this once with just jalapeños and was really disappointed. I thought it was nasty. Now i just quick pickle them.

    Looks great! I make mine with sliced habaneros or a few scorpion or reaper peppers for concentrated spice. I also found out adding a spoonful of crushed red pepper or a splash of chili extract during the simmering stage will intensify the burn without changing the sweet-savory balance. That’s how I like it anyway.

    This may sound like a stupid question. I’ve grown peppers for like 20+ years. I’ve pickled, made hot sauce, dehydrated and made powdered spices, and have had them raw. I’ve never tried “cowboy candy”.

    Does the addition of the sugar and cooking them down a little bit make them like a sweet/spicy treat? I have to assume that adding the sugar cuts the heat significantly? I’m not saying that’s a bad thing. I’m just curious about what the end results are of this. I’ve seen several posts now about “cowboy candy“.
