    I’ve only heard of brick cheese in the context of Detroit style pizza, but it’s obviously working pretty well in this grilled cheese too.

    If you have some quality deli ham you can try out a croque monsieur with Gouda or Emmental, simple but divine with any soup

    That looks really perfect! Your sandwich bread looks fluffy and golden, I think my burner is too hot and I press too much with the spatula :/
