    3 TB olive oil
    1/2 cup onion
    1/2 cup celery
    1/2 carrot
    2 TB garlic
    2 inch piece Parmesan rind
    3/4 cup basic tomato sauce
    6-7 cups chicken stock depending on how thick you like it
    6oz of any small pasta
    3/4 cup pecorino
    1/2 cup chopped parsley
    Salt and pepper
