May I suggest that if you want something absolutely spectacular, add all of the lemon juice, and the zest, from one large lemon roast 6 or 8 cloves of garlic until very soft, and puree that in, and add about a teaspoon and a half of either sumac, or Z'atar to your hummus. 5 minutes on a food processor is going to whip so much are into this, that you might as well call it a mousse. 30 to 45 seconds, once everything is in, is all that's needed. A quarter teaspoon of cayenne pepper doesn't hurt either.

  4. As an Arabic I don't understand why people called it hummus? Hummus means chick peas , this plate is called hummus be-tahini …because there's another plates that has the name of hummus, there's hummus be-tfeen , hummus be-banadoura (tomato) there's fatteht- hummus and so on….
